There are seasons when I enjoy spending an afternoon baking something elaborate, and there are seasons when I simply need a few good things prepared ahead of time. Early summer often feels like the second kind of season. The days are longer. The garden needs tending. There are books to read on the porch, errands to run, and all the ordinary work of home asking for my attention. This bacon, onion, and herb quiche has become one of my favorite recipes for those weeks. I can make it on a Saturday or Sunday afternoon, tuck it into the refrigerator, and enjoy slices throughout the week for breakfast, lunch, or even a simple supper alongside a salad. The fresh herbs in this recipe bring brightness, the bacon adds richness, and the eggs make it satisfying enough to satisfy us through busy mornings.
More than anything, I appreciate recipes that help create a little margin. A prepared meal waiting in the refrigerator is a small kindness to my future self, and those small acts often make a home feel calmer and more manageable. If you are looking for a simple recipe to keep on hand this summer, this one is worth adding to your collection.
